Dandelion Print

All this snow has got me thinking of warmer days to come.  Plus since the groundhog saw his shadow, spring is due to come early!  And if there’s one thing I’ve learned, you can always trust a groundhog.

So anyway, I made an illustration of a dandelion.  What better way to think warm thoughts than with a dandelion?  Also did you know:

Dandelion leaves contain abundant amounts of vitamins and minerals, especially Vitamins A, C and K, and are good sources of calcium, potassium  and fair amounts of iron and manganese, higher than similar leafy greens such as spinach.  (source wikipedia.org)

So maybe try it on your salad this summer.  Maybe plant a garden of them.  Maybe not.  Whatev.

    You probably wouldn’t remember the girls “Grandma Lila”, but every spring she used to fix Dandelion Greens. She’d pick the new shoots as they were just coming out of the ground, clean them, then fix a hot bacon, vinegar, dressing and serve over mashed potatoes. Made it sort of like a wilted lettuce salad, but a bit more tasty. If you come to OR, I’m sure that Norm would let you have all the dandelions you could pick!!
